Sunset Margarita

For Earth Month, lets explore ways to extend the life of your fruit and get creative with how we can use the entire thing. Today we’re kicking it off with a Teapche Margarita!

Tepache is a fermented drink made from the skins and core of a pineapple. An excellent way to use the bits of pineapple that may have otherwise ended up in the trash. If you like apple cider, then tepache is going to blow your mind. Using that, along side a pineapple Maceration created with the spent pineapple bits, I’ve created this delicious margarita.

Sunset Margarita

Ingredients:

  • 1 oz Fresh Lime Juice

  • 1/2 oz Pineapple Maceration

  • 2 oz Teapache

  • 2 oz Blanco Tequila

  • 2 Dashes of Black Walnut Bitters

Combine all ingredients in a shaker and top with ice. Shake for 15 seconds until chilled. Garnish with pineapple fronds and a citrus wheel. Enjoy!

Tepache Recipe

Ingredients

  • Skins and Core of one Pineapple

  • 1/2 a cup of Brown Sugar

  • 1/2 a Gallon of Water

  • 2 Cinnamon Sticks

  • 3 Cloves

Combine all ingredients in a glass container and give it a good stir. Cover the top with plastic wrap and set on the counter. A white foam will start to form on the top indicating the fermentation process. After about three days, strain into a clean container and enjoy over ice or in a cocktail!

Pineapple Maceration

In a mason jar, combine equal weights sugar and pineapple. Cover and leave in a cool dark place overnight. About a day later, you’ll see a liquid start to form. Strain out the syrup and use for delicious flavor in your cocktails. To get even richer flavor, grill your pineapple on the stove until lightly charred before combining with sugar.
