Gin

To top my riff on the Betty Draper cocktail, I made a coconut lime espuma! If you didn’t already know, Espuma means foam. Delicious, light, airy, and the perfect zesty foam to top this gin-based cocktail. You’ll need a whip creamer to make this but it’s fairly simple if you have the equipment. If you don’t have a whip creamer at home, I’d recommend adding an egg white and 3/4 oz of coconut milk to your cocktail.

On it’s own the cocktail base is delicious but the coconut lime espuma is the perfect delicious topping that adds texture and flavor to the experience. Keep reading for both recipes!

Make it stand out

Ingredients:

  • 1/2 oz Lime Juice

  • 1/2 oz Simple Syrup

  • 1.5 oz Gin

  • 3/4 oz Yellow Chartreuse

Method:

Combine all ingredients in a shaker with ice and shake until chilled. About 15 seconds. Strain into a chilled coupe and top with coconut Espuma. Garnish with a dried lime wheel and enjoy!

Coconut Espuma

  • 150 ml coconut milk

  • 40 ml Simple Syrup

  • 30 ml Fresh Lime Juice

  • 2 Egg Whites

    Combine everything in your whip creamer and give a quick shake. Charge twice with an N2O cartridge and put in the fridge for 30 minutes. Shake before using and be careful with your release! If it’s like mine it’ll spray and splash everywhere!!
