If You Like Pina Coladas…

When I was in college I had a deep, almost embarrassing, obsession with pineapples. I feel like this was a pretty common theme for a lot of girls at the time, but walking into my dorm room it was as if a pineapple had exploded and decorated my room. You couldn’t look or sit on a surface that wasn’t covered in pineapples. So it was only fitting that for my 21st birthday my mother crafted a pineapple themed gift basket complete with pineapple flavored vodka (which neither of us would be caught drinking today but it was cute for a 21-year-old), pineapple-shaped tumblers, shot glasses, and shakers, a pineapple ice bucket, and pineapple cocktail recipes. I was in heaven.

Since then I’ve attempted to live down this embarrassing obsession by rejecting and resisting the urge to buy, decorate with, or wear any pineapple paraphernalia since the diploma hit my hand. HOWEVER, my one weakness, my one remaining vice is a good pina colada! It just so happens that today is National Pina Colada Day so read on for my slightly elevated sage & smoked pina colada recipe.

Recipe:

  • 1.5 oz coconut cream

  • 1.5 oz pineapple juice

  • .75 oz Lime Juice

  • 4 sage leaves

  • Tablespoon of coconut flakes

  • 2 oz Wiggly Bridge Small Batch Rum

Method

  • Begin by placing coconut flakes and 2 sage leaves on a board and torching them lightly with a match. Once it starts to smoke, cover with your glass and set aside.

  • In your shaker muddle sage in coconut cream

  • Add in the remaining ingredients and shake for 15 seconds

  • Grab your glass and fill with crushed ice.

  • Strain your cocktail into the glass and garnish with pineapple fronds 

  • Enjoy!

This recipe uses Wiggly Bridge Small Batch Rum that my friends at spirit hub sent me to help me celebrate national pina colada day! Coincidentally, Wiggly Bridge was the first distillery I visited when I turned 21. I distinctly remember tasting their Platinum Blue Agave (similar to a tequila but is not because it’s made in Maine not Mexico!) and having my mind be absolutely blown. It was also the moment I knew I had good taste in spirits, probably would mean trouble for me. Now a few short years later here we are!
