Mrs Clause’s Helper

There’s a cocktail for every type of party this season - this one is a show stopper! This bitter sweet show piece is a riff off of the classic cocktail the Ramos Gin Fizz. It’s a little more involved so don’t put it on the menu for groups larger than 4. In my opinion, the classic recipe isn’t as flavorful as I’d prefer so adding Campari gives it a strong flavor.

Two Tips: One, if you’re having a hard time getting the egg white to foam enough, try using a milk frother instead of shaking it by hand. Two, to strengthen the foam, pop it in the freezer for about a minute before adding the soda water.

Ingredients

  • 1 oz Campari

  • 2 oz Gin

  • 1 oz Lime Juice

  • 1/2 oz Simple Syrup

  • 1/2 oz Coconut Milk

  • Egg white

Method

Add all ingredients except soda water into a shaker and dry-shake for about 30 seconds. Add ice and shake until chilled, about 10 seconds, then strain into a Collins glass.
Pour a little bit of club soda back and forth between the empty halves of the shaker tins to pick up any residual cream and egg white, then use that to top the drink.
