A Toast To Angus

Today is a very special day for more reasons than one. First, it’s the anniversary of when I started sharing my cocktails with the world as @cocktailswithcorinne on Instagram. Second, because today is the launch of my website, taking my page a step further and seeing all that I can do with it. Third, and most important, today would have been my friend Angus’s 21st birthday.

I promised Angus that I would take him out for a drink once he turned 21, since I can’t make good on that promise, I did the only thing I could and created a cocktail as beautiful, complex, and weird as he was! Each ingredient has a special meaning and the method that I put it all together was intentional. Keep reading for the recipe!

Ingredients

  • 2 Diced Strawberries

  • 1 oz of Simple Syrup

  • 1 oz of Pineapple Juice

  • .75 oz of Fresh Lemon Juice

  • 2 oz of Scotch

Method

  1. In a shaker, muddle diced strawberries in simple syrup.

  2. Add in the remaining ingredients and stir without ice.

  3. Strain out the strawberries and begin the milk clarification process. See below for how to milk clarify your cocktail.

  4. Once clarified, stir with ice for 15 seconds and strain into a rock glass over a large ice cube.

  5. Garnish with a strawberry or pineapple frawn and enjoy!

Milk Clarification: What it is & how to do it!

Milk clarification is a super funky method of taking the bitterness, color, and acidity out of a cocktail. Once the process is complete you’re left with an ultra-smooth, complex, and an almost clear cocktail! This method may sound a little strange and daunting but it’s extremely easy, I’ll post a longer blog and video about this soon but in the meantime, you can read below to get the fast version!

  1. Stir your cocktail together without ice in a glass.

  2. In a separate mixing glass, pour one to two ounces of whole milk.

  3. Pour your cocktail over the top of the milk (this part is important! don’t skip this step)

  4. Gently stir the combined mixture for a second or two to make sure it’s fully incorporated. You’ll see the milk begin to slightly curdle.

  5. Next, begin to strain the mixture. This part will take a long time but it’ll be worth it! To get the best strain, I pour my mixture through a coffee filter (a cheesecloth will also work). After a while, the cocktail will start to drip through the bottom of the filter and you’ll notice it’s going to be clear!

  6. Once your cocktail has strained through, discard the coffee filter (you’ll notice that all of the milk solidified and didn’t strain through!)

  7. I prefer to strain the cocktail an additional time to make sure I get all of the particles out of it.

Et voila, you’ve milk clarified a cocktail! This process could take up to a few hours but I think it’s worth the wait!
